Every Sunday for four weeks in June, folks will commune in Brooklyn, New York from noon to 4p. Together, we will explore regional large format meals, familiarizing ourselves with the technical essentials and cultural context needed to bring each offering to fruition. Each afternoon closes with the fruits of our labor, in the form of a family meal.

Growing up in Milwaukee, alongside the freshwater coast of Lake Michigan, fish frys are so embedded into the way that we eat. Black emigrants and descendants of the Great Migration have abundantly shaped the Midwest with their culture and culinary contributions. Together we will explore what makes the perfect fish fry plate and build our own for family meal.
The Menu will include fried catfish, smoked turkey collard greens, kewpie cole slaw, spaghetti with sausage ragu and a dinner roll.

Carnitas is a must-have at any Mexican function worth a damn! Together we will explore the the anatomy of the perfect taco by learning how to cook with lard, make fresh tortillas and scale carnitas for a crowd.
This Menu will include fresh tortillas, charred guac, carnitas and refried beans.

I firmly believe that the testament of any good cook is how they fry chicken. I carefully considered the perfect way to wrap this first installement of Casaflu and landed on my dream Sunday dinner. Together, we will break down the bird, bake biscuits, have a little gem moment and learn the secrets to the best redskin mashed potatos and gravy.
This Menu will include whole fried chicken, red skin mash, chicken feet gravy, buttermilk biscuits and a fried shallot little gem salad.
Milwaukee native Inés Anguiano loves all things food, marrying her rich Black American culture with her first-generation Mexican heritage. Inés’ family moved to Brooklyn, New York when she was 9, introducing yet another influence that’d go on to shape her material reality and culinary perspective.
Her work celebrates the foodways of her predecessors while investigating the many delicate interwoven threads of the Black and Latino diaspora.
Currently managing the Bon Appétit Test Kitchen, she is a regular contributor to the magazine through recipe, video and commercial/advertising work.
Through her personal work, Inés’ offerings honor the existing culinary cultural archive, strengthening context around them while using her imagination to drive her practice.
Her chef residencies Chickenshop at Rhodora Wine Bar and Burleigh Fish Fry at Commune have offered opportunities to serve and connect with her community in Brooklyn, where she grew up.
